Second food cart Portland was the whole idea when my brother and I opened Smash N Wingz in late June. It sounded exciting. The first week was not exciting.

We moved fast. Too fast maybe. We opened in SW Portland, near SW Multnomah Blvd, with people from Multnomah Village, Garden Home, and Beaverton already stopping by. We used the same bank account. We were learning as we went. Every day had a new problem. Every hour had two.

The Problem: Opening Fast Gets Messy

A lot of people think opening a second cart means you already know what you are doing.

Not true.

The first cart teaches you one set of lessons. The second one hits you with new stuff. Real stuff. Annoying stuff. Expensive stuff.

We laughed, because it was true all week. People came in thinking one thing. Then they saw the burger photos and changed their mind right there at the counter. That was one of the clearest lessons from the whole launch.
